A buttery, washed-rind cheese made by the Ferguson family in Schull, West Cork.
This pasteurised cow's milk boasts a medley of savoury, nutty and fungal flavours. The rind is a pinkish colour with a white bloom - this rind, or crust, is actually a triple layered bloom of different organisms which combine to give it's unique flavour.
