Duck Confit is one of the most luxurious of foods in French cuisine. Gently cured duck legs bathed in their own fat and slowly cooked to falling-off-the-bone perfection. Then the skin is crisped in a pan or oven, giving you the sinful combination of silky meat and crackling skin.
It can be used as a delicious meal for two people. A lovely accompaniment would be to have some red cabbage slowly-braised with apples & red wine. duck confit is also delicious with Puy Lentils and of course with Patatoes roasted in the duck fat.
The left over duck fat can be kept in the fridge for further used...
