Trio of Rillettes, Black Pudding and Black Pork Terrine from Bigorre

Recognizable by its black coat and horizontal ears, the Noir de Bigorre pig is a purebreed pig that lives in freedom in its territory of origin, Bigorre, on the borders of the Hautes Pyrénées, the Gers and the Haute Garonne.

It is at the foot of the mountains, in this gentle and peaceful landscape of meadows and undergrowth, that the Noir de Bigorre pig moves in small herds to feed, taking advantage of a healthy diet based on the natural resources of its environment: grass, acorns, chestnuts, triticale cultivated in the geographical area, and other resources of the environment.

Black pudding spread: Head and meat of Noir de Bigorre PDO pork (57%), pig's blood (origin: France), onions, spices, natural flavours, aromatic plants, salt, pepper.

Terrine: Noir de Bigorre Pork Throat PDO (40%), Pork Liver (origin: France) (30%), Black Bigorre Pork Belly PDO (10%), Black Bigorre Pork PDO (10%), rice flour, egg white, milk, salt, dextrose, pepper.
