One of the most popular cheeses in France, because of its amazing nutty flavours, Comté is raw milk, hard cheese made from summer milk in the Doubt region, East of France.
It takes over 300 litres of cow's of milk to make a Comte, and this cheese is made and matured in small cooperative 'fruitiere'.There are different grading of the Comte depending on its maturity.'Fruite' (ie Fruity) means its between 12 to 15 months old and the Vieux Comte is 18 months minimum.
