A beautifully crafted Irish farmhouse cheese from Sean and Deirdre Fitzgerald in Cratloe, Co. Clare. from pasteurised milk of their own sheep’s herd. Vegetarian rennet

 The Fitzgerald family have been working the land at Cratloe for four generations. In the 1980s, Sean and Deirdre began exploring cheesemaking, travelling to England, the Netherlands and France to learn from some of the finest cheesemakers before bringing their knowledge and experience home to Clare. What began as a small hobby grew into the award-winning Cratloe Hills cheese we know today.

Flavour & Texture

Cratloe Hills is a wonderfully approachable sheep’s cheese, with a rich, buttery and gently sweet flavour. As it matures, it develops greater depth, with delicious nutty and caramel-like notes and a firmer, more concentrated texture.

It has all the richness you might expect from sheep’s milk, but without being overpoweringly strong — making it a lovely cheese for both newcomers to sheep’s cheese and seasoned cheese lovers.

What to Pair It With

Cratloe Hills is fantastic on a cheeseboard alongside:

  • 🍎 Fresh apple or pear
  • 🍯 A drizzle of Irish honey
  • 🌰 Walnuts and other toasted nuts
  • 🍞 Good crusty sourdough
  • 🍇 Fig or fruit chutney

For something simple, try it with a slice of warm sourdough and a little chutney. For a more substantial pairing, its buttery, nutty character works beautifully with roasted vegetables, potatoes or pasta.

And, of course, it deserves a place on any good Irish cheeseboard.
