Maison Théas is a family farm based in Gardères, in the Hautes-Pyrénées, where four generations have preserved a traditional approach to duck farming and farm production. The family grows its own maize on the farm and places particular emphasis on traditional methods, quality ingredients and maintaining control over the production process. Their recipes are family recipes, reflecting the culinary traditions of the Pyrénées and the South-West of France.
How to Prepare:
For the best result, gently warm the cassoulet before serving.
Remove the cassoulet from the jar and place it in an ovenproof dish.
Warm gently in a preheated oven until piping hot throughout.
For an authentic finishing touch, allow the top to become lightly golden and crisp.
Serve immediately, ideally with crusty French bread and a simple green salad.
Chef's tip: Allowing the cassoulet to develop a lightly golden crust on top adds a delicious contrast to the rich, tender beans and duck.
Duck meat, Toulouse sausage, duck fat, Tarbais beans, salt and pepper.
